Apple Cinnamon Protein Pancakes
Makes 6-8 pancakes
Ingredients
- 1 scoop LEAN whey isolate protein powder
- 2 egg whites
- 1 c. unsweetened applesauce
- 1/2 c. unsweetened vanilla almond milk
- 1 c. gluten free oats
- 1 tsp. baking powder
- 1/4 tsp. salt
- 3/4 tsp. cinnamon
- 1 tsp. vanilla extract
- 1 tsp. agave nectar
- 1 1/2 tbs. natural peanut butter
- 1/4 c. pure maple syrup
- 1 pinch of coarse sea salt
Directions
- Place protein powder, oats, baking powder, cinnamon, salt, applesauce, almond milk, vanilla, agave and egg whites into blender.
- Blend until the pancake batter is smooth and creamy.
- Pour into a bowl and let sit for a few minutes-batter will thicken as it sits.
- Heat a large nonstick skillet and lightly coat with nonstick cooking spray or coconut oil.
- Scoop 1/4 c. of the batter and pour on hot skillet.
- Cook until bubbles appear on top, about 2 minutes.
- Flip cakes and cook until golden brown on underside, 2 minutes.
To make peanut butter maple syrup:
- Combine peanut butter and maple syrup together in a medium bowl.
- Heat in microwave for 15-20 seconds.
- Stir and drizzle over pancakes.
- Top with a little bit of sea salt.
- Enjoy!
